What is Modified Atmosphere Packaging? You may be familiar with different types of food packaging, but have you heard of modified atmosphere packaging (MAP)? MAP is a food preservation technology that packs food in an atmosphere that typically contains 78.08% nitrogen, 20.96% oxygen and 0.03% carbon dioxide. During this process, the atmospheric temperature is lowered, which helps reduce the respiration rate of the food and prevents the product from aging and maturing. Displacement of oxygen within the package also occurs during this process, as too much oxygen can lead to product deterioration.
